During my set up of my server I enabled the iTunes sharing so it then proceeded to copy my music onto the server. The problem was that I was getting around 6MB/s during this whole process. I have a gigabit router, gigabit card, and a gigabit switch. The netgear switch is showing that gigabit is on for both the server and my pc port. Is there something I'm missing?

Tell us more about the specs/OS on your client PC. Also, how were you measuring the throughput, was it via TaskManager?

I've seen slow network copies on Vista, where an identical HW XP machine runs super fast. Supposedly SP1 for Vista is supposed to improve things in this area.

The client PC was a laptop running XP SP2. I used task manager as well as a system monitor plugin from google desktop. It took around 30 minutes to copy ~13GB iTunes library. I tried copying a single large video file directly to the server via windows explorer and I got rates around 20MB/s

Sounds like the problem may be in your network hardware. Was this over a wireless connection, or was the laptop hooked up via lan cable?

Just ran a check on my server and I can transfer at 33mbps.

This was over a wired lan. The server and the laptop were both hooked up to the same netgear gs105 gigabit switch. Is there some type of utility/app I can run to test my lan speeds?
