So,

my custom domain name with TZO is expiring soon.
I am looking at using a different registrar.
How do I set up remote access if I am not using one of the 3 listed default services available under the remote access piece of the settings?

You'll probably want to set up the free homeserver.com domain to make WHS happy then set up your custom provider in parallel. You can't add your custom provider to the Home Server Console.
