After months of research, reading hundreds and hundreds of reviews, I have found some components that I would like to run past the community before purchasing:

CASE: Cooler Master STC-T01-UW1 Stacker Tower Case - $109 - http://reviews.cnet.com/cases/cooler-master-cm-stacker/1707-3030_7-31284289.html
MOBO: ASUS P5G41-M LE/CSM LGA 775 Intel G41 Micro ATX Intel Motherboard
PROC: Intel Pentium Dual-Core E6500 Wolfdale 2.93GHz LGA 775 65W Dual-Core Processor Model BX80571E6500
MOBO/PROC - $141.98 - http://www.newegg.com/Product/ComboDealDetails.aspx?ItemList=Combo.315657
HDD Trays: 3 X SUPERMICRO CSE-M35T-1B Black 5 Bay Hot-Swapable SATA HDD Enclosure - $329 - http://www.newegg.com/Product/Product.aspx?Item=N82E16817121405
SATA Card: 2 X SUPERMICRO AOC-SAT2-MV8 64-bit PCI-X133MHz SATA Controller Card - $132 - http://www.newegg.com/Product/Product.aspx?Item=N82E16815121009R

DVD-ROM, HDDs (3.5Tb) and Memory (2Gb CORSAIR PC2 8500) are on hand
--------------------------------------------------------
Total cost: Roughly $750 (plus memory and HDDs)

This should give me capacity for up to 15 Hot swappable HDDs and either a DVD-ROM or a 16th system drive.... Any feedback would be really appreciated!

All of that should work fine. Although, that link to the Coolermaster case review indicates the case is discontinued.

Thanks for the look. I was able to find a couple used cases on the web... the going price is about $110. However, no indication of condition, parts, power supply etc... If this case choice should fall through, does the community have any recommendations on a suitable substitute? Something that can handle 3 disc cages and have room left over for an optical?

There are several from Coolermaster, Antec, Lian Li, etc., that will fit your needs.

Take a look at the Antec 1200. You can then use a HDD cage like the Athena or the cages you are looking at

Also, here is an excellent guide on AVSForum that I follow for building Media Servers which may give you a few more ideas:
