There is no problem streaming the HD video from the USb enclosure. I have the 4 bay USB enclosure and have had no problem.
Plus HD video is not bandwidth intensive. The file transfer rate to the USB is much higher than the HD bitrate.

As commentary,

On my wish list would be the ability to select the storage that the PC backups are stored on. That way, you could direct these backups to the "slower" USB drives if you have any connected.

For server backups, you can already do this albeit manually (or using Cougar's automated way found in the wiki).

We might be arguing academia here. It's clear that theoretically USB 2.0 is slower than sata drives but would you notice in real-world usage? Perhaps not.
