Where on the WHS (what specific path) is the HP Media Collector putting Photos, Music, Video files that it collects?

Also -

If the HP Video Converter is running, will it automatically convert any of the videos that the HP Media Collector collected and put them in the Converted Videos folder?

Lastly -
Will the HP Media Collector grab movies from iTunes on my client machines and put it on the WHS?

In the Music, Video, and Photo shared folders.

Yes, if you've configured the Video Collector to monitor the Videos shared folder and it supports the formats you are placing there.

I don't know the answer to this one, sorry. Try the HP documentation included with your server, as I believe they discuss the iTunes integration more.
