As a redundant backup, I would really like to back up certain shared folders on WHS to different external HDDs on various client machines.
I have tried running a simple backup software, such as SecondCopy, from the server (and from a client machine) but keep getting 'Access Denied' errors from the shared folder location.
I have tried running the backup software as Administrator, tried using the UNC path, but still get the error.
Does anyone know if this is a "feature" of WHS or should this be possible and I am just not doing something right?

I'd probably suggest you use the built-in Server Backup feature of WHS, or else run your sync scripts from the clients targeting the servers shares since that should be a more simple configuration and not require opening up any additional shares.

Again, please pardon the unabashed ignorance here...
Are you refering to the backup feature on the server, accessed via RDP>PROGRAMS>SYSTEM TOOLS>BACKUP? Or, is there a backup feature in the WHS console that backs up share files to another location on the local network?

The Server Backup feature is access via the Server Console and only works with locally attached disks, not network locations.
