What exactly is the best most correct way to uninstall and get rid of Mcaffey after it's been registered and activated through the trial period? That thing is SOOOO SLOW in scanning for viruses. Would doing a system restore to the OS partition make it go away?

You could try uninstalling from the Add-in screen of the Server Console and see of that gets rid of it. AV Programs are notorious for leaving remnants behind. If that doesn't do it you mightneed yo use the McAffee removal tools found on their website or do a system recovery, which will out down new OS and keep data intact.
