If you just want to clean the system, do a Factory Reset, that will replace the OS leave an empty partition. If you want to be sure no one can ever get any data off of your server, you would need a secure erase application, a search will turn up recommendations on tools for that.

I would assume that you can pull the drive out and attach it via a USB dock/cable and run one of the many data wipers. Then put it back and do a reset.
Most everyone knows when data is deleted, it's really still their, you just need the right software to see it, so a data wiper will write over the old data over and over again with useless data to make sure its gone.
